Recipe Exchange #1

So my mom was a stay at home mom for almost my entire life. She had the time to cook large meals multiple times a week. I'm surprised I was never an obese child because we always ate so good! I have many recipes that she made on a regular basis that I love. Some of them are more time consuming then others. She made a lot of stuff from scratch. I wanted to ever-so-often share one with you.

Here is one of my top 5 favorite recipes that I make multiple times a month for Matt and I for dinner. Addy loves it too!

Sweet and Sour Meatballs from Scratch

First you make the meatballs and brown them on the stove. Really this is pretty easy. It just takes patience. You throw everything in a bowl, mix and roll into balls. Then you roll the meatballs in flour and toss a few at a time into the pan with some oil on med heat. Don't fill it too full or it will take the meatballs longer to cook all the way through. Remove the ones one by one that are finished cooking. Set them on a empty plate.

After all the meatballs are done cooking it only takes a minute or two to prepare the sauce. Put the brown sugar and cornstarch in same pan you used to brown the meatballs. Mix and add the pineapple and remaining ingredients. Stir together and bring to a simmer. The meatballs go over rice so you can get that started now.

Add the meatballs and let them cook for about 10-15 min together on med low to get the sauce thickened.

Serve over rice!

* Sometimes I make DOUBLE meatballs cause I love them so much and the original recipe makes enough for 4 people. Matt and I can have it for two full meals if I double it. If you have teens in your house or are having company I would suggest doubling the recipe. They are amazing as leftovers!
